The base beer is SEVNA - an American wheat ale brewed with ancient local grains from the Grani Alti supply chain and fermented with an indigenous yeast - aged for 10 months in wood with the microbial flora of the cellar.
This beer explores the possibilities of biotransformation of the aromatic components of hops through Brettanomyces, which gives tropical and coconut notes, together with rusticity and light acidity in the taste.
