Appearance. Hazy, pale yellow-gold (3–4 SRM) with a moderate, tight-bubbled white head that persists briefly. Visible effervescence.

Aroma. Moderate to high intensity. Lactic tartness is prominent, complemented by the earthy, malty, and slightly woody notes of Assam tea. Low bready wheat malt and a subtle, rustic funk from long-term mixed fermentation. No hop aroma.

Taste. Initial sharp tartness of lemon and green apple, followed by a robust wave of savory Assam tea. The salt is noticeable but integrated, enhancing the bready wheat malt. No hop flavor or significant bitterness. Finish is bone-dry and acidic, with a lingering tea-tannin complexity.

La fermentazione primaria avviene con il lievito autoctono BUNNY (Bologna Unknown Native Naughty Yeast), seguita da una maturazione in vasca aperta nella cantina del birrificio.
