Yellow Belly is a decadent Imperial Stout that defies expectations with its signature peanut butter and toasted biscuit profile, achieved entirely through masterful malt selection and brewing technique. It pours a viscous, midnight black with a persistent tan head. The aroma is a concentrated blast of dark chocolate, roasted peanuts, and rich cocoa, underpinned by subtle dark fruit esters of raisin and prune. On the palate, deep layers of fudge and nutty sweetness are balanced by a firm hop bitterness and a heavy, velvety body. The experience concludes with a lingering warmth from the 11% ABV and a smooth, dessert-like finish.
Appearance. Jet black and completely opaque (40+ SRM). It produces a dense, creamy, deep tan head with moderate retention. Due to its high viscosity and alcohol content, thick legs are visible on the glass.
Aroma. High intensity. Dominant notes of roasted peanuts and cocoa powder meld with a significant toasted malt character reminiscent of graham crackers or biscuits. Subtle background esters of black currants and raisins are present, alongside a clean, supportive alcohol warmth.
Taste. The initial impression is intensely sweet and nutty, followed by rich flavors of dark chocolate, burnt sugar, and molasses. A medium-high bitterness provides necessary balance to the thick malt base. The finish is long and complex, featuring lingering notes of oily peanuts, espresso, and a smooth, warming sensation.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low to moderate, enhancing the creamy mouthfeel. A noticeable but well-integrated alcohol warmth is present without being harsh or solventy.
