Stygian Falls is a quintessential Black IPA that balances the shadowy depth of six specialty malts with the vibrant, piney resins of the Pacific Northwest. An opaque, near-black pour sets the stage for an aromatic profile led by Centennial and Cascade hops, offering classic notes of grapefruit rind and sticky pine needles. The complex malt bill provides a smooth, almost caramel sweetness and subtle hints of dark chocolate without the harsh acridity or burnt character of a stout. The palate is defined by a firm, assertive bitterness that cuts through the silky body, finishing clean with a lingering, resinous snap and a wisp of toasted grain.
Appearance. Opaque black (SRM 38). Thick, persistent, light tan head with excellent lacing.
Aroma. Moderate-high hop intensity featuring prominent pine needles and grapefruit peel. Supporting malt character provides soft caramel, light toast, and a hint of dark cocoa. Clean fermentation profile.
Taste. Hop-forward with resinous pine and citrus zest initial impression. Medium malt backbone offers restrained chocolate and toasted nuttiness, avoiding ashy or burnt flavors. Firm bitterness (estimated 60-70 IBU) balances the caramel sweetness. Finishes dry to off-dry with a clean, lingering resinous aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation. Light, well-integrated alcohol warmth without astringency.
