Phoenix is a vibrant Hazy IPA that exemplifies a juicy profile through a calculated blend of Mosaic, Simcoe, and Ekuanot hops. The sensory experience is led by high-intensity aromas of ripe mango and luscious stone fruit, layered with bright citrus notes. On the palate, the soft, medium-full body provides a pillowy canvas for the tropical fruit intensity to shine, supported by a neutral, lightly bready malt backbone. With a restrained bitterness and a smooth, off-dry finish, this beer showcases deep hop complexity without harshness, delivering a refreshing yet substantial profile defined by its modern, fruit-forward hop character and biotransformation-driven depth.
Appearance. Straw to light amber (approx. 4–6 SRM) with a significant, opaque haze that provides a characteristic shine. It features a medium to rocky, meringue-like white head with very high retention and substantial lacing.
Aroma. High intensity hop aroma dominated by ripe mango and tropical stone fruits. Bright citrus notes of grapefruit and orange are present, supported by a clean, lightly bready malt background. Fermentation character is neutral with no distracting sulfur or diacetyl.
Taste. High fruity hop flavor mirroring the aroma with prominent mango, peach, and citrus peel. Low, grainy malt flavor provides a subtle foundation. Bitterness is moderate but perceived as low due to the fuller body; the finish is off-dry and smooth with a lingering, juicy fruit aftertaste.
Mouthfeel. Medium-full body with a soft, pillowy texture and no harshness or astringency. Carbonation is moderate. A light, well-integrated alcohol warmth is present without being hot or fusel.
