Middle Tor is a vibrant Red IPA that balances a sturdy, complex malt backbone with an expressive burst of New World hops. The sensory experience begins with a high-intensity aromatic profile, leading with notes of stone fruit, citrus, and a hint of resinous pine, layered over a base of toasted bread and light caramel. On the palate, the interplay of specialty malts provides a soft toffee sweetness that quickly gives way to a firm, clean bitterness. This medium-bodied ale finishes dry and crisp, showcasing a lingering hop character that complements the subtle dark fruit esters and deep copper hues of the malt bill.
Appearance. Deep copper to reddish-amber (13–17 SRM). Clear to slight haze. Persistent, off-white to light tan head with moderate lacing.
Aroma. High intensity hop aroma featuring notes of grapefruit, peach, and tropical fruit. Supported by a moderate malt character of toasted biscuit and light caramel, with low fruity esters.
Taste. Initial impression of citrusy and stone fruit hop flavors, immediately followed by a complex malt profile of toffee and toasted crust. Medium-high bitterness that is firm but not harsh. Finishes dry to slightly off-dry with a lingering resinous hop aftertaste and clean fermentation profile.
Mouthfeel. Medium body with a smooth texture. Moderate carbonation. Very low alcohol warmth, consistent with its sessionable strength, and no significant astringency.
