Buxton / Lervig Trolltunga
Trolltunga is a striking Wild Specialty Beer that bridges the gap between a sharp, lactic sour and a contemporary IPA. This collaboration between Buxton and Lervig showcases a vibrant sensory profile defined by the addition of gooseberries, which impart a distinct green, vinous, and tart character reminiscent of Sauvignon Blanc. The aroma is high-intensity, bursting with zesty citrus and tropical hop notes alongside the sharp, acidic punch of fresh fruit. On the palate, a clean lactic sourness harmonizes with a light malt base, leading into a dry, refreshing finish with a subtle pithy bitterness. It is a bold, adventurous pour reflecting its namesake's rugged Norwegian landscape.
Appearance. Pale straw to light gold (3–5 SRM). Pours with a slight haze, typical of a dry-hopped sour. The white head is moderately frothy but may dissipate quickly due to the low pH, leaving light lacing.
Aroma. High intensity. Sharp, lactic acidity leads, followed immediately by the distinctive green, slightly floral, and tart scent of gooseberries. Hop character is prominent, featuring notes of grapefruit and passion fruit. Low grainy malt sweetness is buried under the acidic and fruity layers.
Taste. Initial impression is one of crisp, clean acidity. The gooseberry flavor provides a tangy, vinous mid-palate that complements the citrusy hop flavors. Bitterness is moderate, providing structure without clashing with the sourness. The finish is very dry and mouth-watering, with a lingering tartness and a touch of hop resin.
Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the perception of acidity. Very low alcohol warmth despite the 6.3% ABV. There is a slight tannic astringency from the gooseberry skins that contributes to the dry finish.
