This Somerset Pomona presents a luxurious marriage of unfermented vintage apple juice and potent cider brandy, matured deeply in oak barrels. The sensory experience is dominated by concentrated baked apple, golden raisin, and rich toffee, underpinned by the structural elegance of Kingsbury Episcopi apple tannins. The oak maturation introduces layers of vanilla and toasted wood that complement the heady warmth of the spirit. It offers a velvety, liqueur-like profile where the natural sweetness of the must is balanced by the sharp acidity of traditional cider fruit and the sophisticated, lingering warmth of well-aged apple brandy, resulting in a complex and harmonious digestif.
Appearance. Deep amber to mahogany (18–25 SRM). Completely still with no foam or lacing. Brilliant clarity with heavy legs or tears clinging to the glass due to high alcohol and sugar content.
Aroma. High intensity. Rich aromas of cooked apple, caramelized sugar, and dried fruits like dates and figs. Prominent oak character provides vanilla and light spice. Significant cider brandy warmth is present, accompanied by floral apple esters and a hint of wood-derived tannin.
Taste. Initial impression is intensely sweet and rich with concentrated apple syrup, honey, and spice flavors. The cider brandy adds a clean, warming spirit character. Oak maturation provides a firm tannic structure and notes of leather and toasted wood which balance the sugar. The finish is exceptionally long, warming, and slightly drying from wood tannins, remaining clean and complex.
Mouthfeel. Full and viscous body with a syrupy, mouth-coating texture. No carbonation. Significant alcohol warmth is felt, though it remains smooth rather than harsh. Moderate astringency from oak and apple skins provides a structural grip.
