This Ruby Mild captures the atmospheric essence of the East Anglian coast with a complex malt depth. It opens with a bouquet of toasted biscuit and soft chocolate, underscored by the delicate, earthy perfume of Goldings hops added in the whirlpool. The palate is defined by a gentle liquorice sweetness that weaves through layers of roasted grain and dark caramel. Despite its dark mahogany hue, it remains a quintessential session ale, offering a light-to-medium body and a clean, refreshing finish. The subtle interplay between the herbal Goldings and the rich malt bill creates a hauntingly drinkable and nuanced Dark Mild.
Appearance. Deep mahogany with brilliant ruby highlights (20-25 SRM). Forms a moderate, creamy tan head with fair retention and light lacing.
Aroma. Moderate malt intensity featuring prominent notes of toasted biscuit, milk chocolate, and a hint of black liquorice. Very low earthy and floral hop character from the Goldings. Clean fermentation profile with just a whisper of dark fruit esters like plum.
