This Imperial Stout from Burnt Mill Brewery presents a decadently layered sensory experience, defined by its complex marriage of roasted and aromatic malts. The initial impression is dominated by an intense nose of dark molasses and sun-dried raisin. On the palate, the beer unfolds with full-bodied flavors of black liquorice and rich rum-soaked raisins, characteristic of its sophisticated malt bill. This 8% ABV stout maintains a remarkably smooth profile, offering a velvety, rich body that transitions into a lingering finish of dried fruits. Appearance. Jet black and opaque (SRM 40). Pours with a dense, persistent dark brown head that exhibits excellent lacing. High viscosity is apparent in the glass, leaving noticeable legs.

Aroma. High intensity and deeply complex. Dominant aromas of black molasses and roasted grain are complemented by a strong dark fruit ester profile featuring prominent raisin and plum. Subdued notes of black liquorice and a hint of dark chocolate are present. Hop aroma is very low, allowing the malt and fermentation character to lead.

Taste. Initial impact is rich and bittersweet, featuring deep flavors of molasses and anise-like liquorice. A significant presence of rum-and-raisin develops mid-palate, supported by a sturdy roasted malt backbone. The bitterness is firm but well-integrated, balancing the residual malt sweetness. The finish is long and warming, concluding with a concentrated dried fruit character.

Mouthfeel. Full to very full-bodied with a chewy, luscious, and velvety texture. Carbonation is moderate, providing enough lift to prevent cloying. A gentle, smooth alcohol warmth is present, reflecting its strength without being sharp.
