Burnt Mill Brewery

This American IPA is a focused exploration of the Nelson Sauvin hop, delivering a sophisticated West Coast profile. The sensory experience is defined by intense aromas of crushed gooseberries and rich vinous wine, characteristic of this premium New Zealand variety. Set against a lean malt backbone, these complex fruit notes transition into a crisp, decidedly bitter finish. Burnt Mill’s interpretation prioritizes clarity of flavor and a refreshing dryness, allowing the singular hop character to shine without distraction. It is a modern, vibrant take on the style that balances high aromatic intensity with the classic, clean structure of a well-crafted IPA.

Appearance. Brilliant, clear medium gold (approx. 7 SRM). Topped by a persistent, medium-sized white head that leaves significant lacing on the glass.

Aroma. High intensity leads with distinct notes of white wine grapes and fresh gooseberry. Secondary layers of passionfruit and crushed lime emerge, supported by a very low, clean, crackery malt presence. The fermentation profile is exceptionally clean, with no noticeable esters.

Taste. High hop flavors of white wine and tart gooseberry dominate the palate. A lean, neutral malt base provides minimal support, ensuring the hops remain the focus. Bitterness is firm and assertive but clean, cutting through the fruitiness. The finish is very dry and crisp, with a lingering, hoppy aftertaste that remains bright and avoids harshness.

Mouthfeel. Medium-light body with a crisp, smooth texture. Carbonation is medium-high, enhancing the dry finish. A very subtle, well-integrated alcohol warmth is present, but it remains smooth and free of any astringency.

“Essentially a perfect single hop Nelson west coast IPA. I could probably manage it 20% more bitter, a real classic kick in the teeth, but as it is it is gorgeous on the nose with pine and grapey tropical fruit, dry and pithy in the finish. Gorgeous.”
