It offers a striking aromatic profile described as a blueberry bomb, intricately layered with an acetic sweetness and notes of balsamic vinegar. The fermentation blend of Saccharomyces cerevisiae, Brettanomyces, Lactobacillus, and Pediococcus creates a multifaceted acidity that pierces through the jammy fruit character. On the palate, the tartness of the blueberries is primary, evolving into a funky, rustic depth.
