Raspberry Monolith is a complex Wild Specialty Beer that marries the depth of aged dark ales with the vibrant intensity of fresh fruit. A massive addition of 300 grams per litre of raspberries provides a luscious, jammy core, complemented by the sharp, clean acidity of a mixed fermentation. The dark malt base offers subtle notes of cocoa and roasted grain, while the barrel-aging process introduces faint tannins and earthy Brettanomyces funk. Lively carbonation lifts the palate, balancing the richness of the fruit and the noticeable 7.8% ABV warmth for a sophisticated, multifaceted finish that remains impressively dry.
Appearance. Deep mahogany with a vibrant ruby-purple hue; forms a frothy, pink-tinted tan head with moderate persistence; slightly hazy from the high fruit density.
Aroma. High intensity; dominant fresh raspberry and seed-like earthiness; secondary notes of lactic acidity, leather, and farmyard funk; underlying dark chocolate and toasted malt depth with a whisper of vanillin oak.
Taste. Assertive lactic sourness and bright, jammy raspberry flavor; the mid-palate reveals dark malt complexity—toasted crust and subtle cocoa—integrated with woody tannins; finishes very dry and tart with lingering red berry skins and a clean, acidic bite.
