Burning Sky Brewery Project 23 is a sophisticated Brett Beer that blurs the line between fine wine and wild ale. Following three years of patient maturation in Cognac barrels, this mixed-fermentation ale was refermented on foot-crushed Pinot Noir grapes, resulting in an extraordinary sensory depth. The extended barrel aging imparts refined notes of toasted oak and vanilla, which intertwine seamlessly with the intense, vinous character of the Pinot Noir. Expect a complex interplay of funky leather, dark cherry, and a subtle spirituous warmth. The finish is remarkably dry and structured, showcasing the sophisticated marriage of grape tannins and wild yeast character.
Appearance. Deep ruby to garnet with soft violet highlights. Displays slight haze from the grape solids and mixed fermentation. Pours with a moderate, pink-tinted head that shows fair retention and fine lacing.
Aroma. High intensity and multifaceted. Initial aromas of barnyard funk, wet hay, and leather from the Brettanomyces are layered over rich Pinot Noir notes of black cherry and raspberry. The three-year barrel rest contributes distinct Cognac notes of vanilla, dried apricot, and seasoned oak.

Mouthfeel. Medium body with a slight tannic structure from the fruit skins and oak. Carbonation is moderate and fine-beaded. A noticeable but well-integrated alcohol warmth is present, consistent with the higher strength and spirit-barrel aging.
