Margot is an ethereal and refreshing Table Saison that defies its sessionable stature. Utilizing Burning Sky’s expressive house saison yeast, the profile is defined by a sophisticated interplay of peppery phenols and vibrant fruit. The hop bill featuring Nelson Sauvin and Motueka drives distinctive aromas of crushed white grapes, lime zest, and tropical fruit, while the Celeia hops add a delicate floral and earthy counterpoint. Supported by a light and crisp malt bill, the beer remains highly attenuated and bone-dry. It is an eminently drinkable ale where rustic fermentation complexity meets modern hop aromatics, finishing with a bright, clean, and lingering spicy snap.

Appearance. Pours a pale, luminous gold (approximately 4 SRM) with a slight, hazy yeast cloud. It supports a dense, rocky white head with excellent retention and significant Belgian lacing. Highly effervescent with visible rising carbonation.

Aroma. High intensity aromatic profile. Prominent yeast-derived esters of lemon peel and pear are balanced by spicy black pepper phenols. The hop character is assertive, showcasing gooseberry, white wine, and mojito lime, with underlying floral and herbal notes. Malt is low, presenting as a faint, fresh-cracked grain scent.

Taste. Initial impression is crisp and intensely refreshing. Soft, grainy malt flavors of cracker and wheat provide a brief foundation for a wave of hop flavors including lime, green grape, and subtle elderflower. Bitterness is moderate but assertive given the low gravity. The fermentation character adds spicy complexity throughout. The finish is exceptionally dry and clean, with a lingering citrus and peppery aftertaste.

Mouthfeel. Medium-light body that feels surprisingly substantial for its ABV. Very high carbonation creates a lively, prickly, and effervescent sensation on the tongue. Zero alcohol warmth. No astringency; remarkably smooth yet crisp.
