Burning Sky’s Doppelbock is a masterclass in malt depth, anchored by a robust grain bill featuring Narke Munich, Pilsner, Bohemian, and Carapils malts. This traditional lager presents an inviting bouquet of rich bready aromas, evolving into decadent boozy fruitcake flavors on the palate. The cold-fermented profile is exceptionally clean, allowing the subtle, herbal nuances of Sladek and Premiant hop varieties to provide a delicate counterbalance to the intense malt sweetness. Hints of dark fruit and toasted crust emerge through the lagering process, creating a sophisticated profile that celebrates the liquid bread heritage of the Doppelbock style with a warming, velvety finish.
Appearance. Deep copper to dark brown in color (18-22 SRM) with brilliant clarity and ruby highlights. It supports a large, creamy, off-white to tan head with excellent persistence and delicate lacing.
Aroma. High intensity of rich malt, characterized by deep Maillard products, toasted bread crust, and light caramel. Very low spicy or herbal hop aroma. Esters are moderately low, presenting as dark fruit leather, plums, and raisins. Fermentation is very clean with a faint, smooth alcohol presence.
Taste. Initial impression is very rich and malty. Prominent flavors of toasted Munich malt, bready sweetness, and a complex fruitcake character. Hop bitterness is moderate-low, serving only to support the massive malt profile. Hop flavor is very low and slightly herbal. The finish is malty-sweet but shows good attenuation, remaining clean and smooth without being cloying.
Mouthfeel. Medium-full to full body with a smooth, creamy texture. Carbonation is moderate to moderately-low. A light, pleasant alcohol warmth is present but never harsh or fusel, with no perceptible astringency.
