Burning Sky Brewery Coolship 2025 is a masterful expression of spontaneous fermentation, blending vintages from 2021 to 2024 to create a sophisticated, wild Saison. The use of a traditional turbid mash and cereal grains provides a rustic, grainy foundation that supports a vibrant, lactic acidity. Aging in oak barrels imparts a structured wood character and subtle tannins that complement the complex fermentation profile. Expect a sensory journey of lemon zest, white pepper, and a distinctive earthy funk, all delivered with an effervescent, bone-dry finish that reflects the unique Sussex landscape.

Appearance. Burnished gold with a slight, natural haze. It supports a long-lasting, dense, rocky ivory head that leaves intricate Belgian lacing. Highly effervescent with visible rising bubbles.

Aroma. High intensity aromatic profile with a complex mix of citrusy esters, notably lemon and green apple, paired with spicy white pepper phenolics. A pronounced wild character offers notes of earthy funk, hay, and weathered oak, while the malt remains a subtle, grainy backdrop.

Taste. A sharp, pleasing acidity leads the palate, balanced by a soft, grainy malt presence from the cereal grains. Flavors of tart stone fruit and citrus are prominent, followed by a spicy, peppery yeast character and a dry, woody oak finish. Bitterness is low, as the refreshing acidity provides the primary structural balance.

Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a crisp, prickly sensation. A light, well-integrated alcohol warmth is present, finishing bone-dry with a subtle, structured tannic pull from the oak aging.

Producing their first beer in the Autumn of 2013, Burning Sky were rewarded far beyond our expectations â not just with a couple of orders but with Mark being voted âBrewer of the Year 2014â by The Guild of British Beer Writers, and the brewery being named 4th Best New Brewery in the World 2014 by Ratebeer.
