Burning Sky Brewery
Choose Any Memory presents a vibrant sensory journey, defined by its seven-month maturation in oak barriques and stainless steel. The nose is an evocative blend of fresh raspberries and a delicate funk from Burning Sky’s unique yeast culture, offering notes of earthy hay and soft, aged wood. On the palate, a sharp raspberry tartness leads, supported by a varied grain bill that provides a structural backbone against the crisp acidity. The mixed fermentation imparts a complex, wild character that harmonizes with subtle tannins from the oak. It finishes bone-dry and refreshing, with lingering fruit skin and a whisper of barnyard complexity.
Appearance. Radiant deep pink to ruby red with a slight haze. Pours with a moderate pink-tinted head that dissipates relatively quickly, leaving a fine ring of lacing and high carbonation bubbles.
Aroma. High intensity with dominant jammy raspberry. Complex wild fermentation notes include hay, light leather, and an earthy funk. The aroma is rounded out by subtle oak-derived vanilla and aged wood, with no hop character and low bready malt.
Taste. Initial impression is sharply acidic and fruit-forward. Intense raspberry flavor persists, appearing tart and vinous since the sugars are fully fermented. A delicate funk and light wood tannins provide complexity. Bitterness is virtually absent, leading to a very dry, clean, and acidic finish with lingering red fruit notes.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the crisp, sour profile. A very slight puckering astringency from the fruit skins and oak aging. Alcohol warmth is negligible and well-integrated.
