Burning Sky Brewery

This elegant, complex Saison showcases a masterful blend of spontaneously fermented wild ales further refined by four months in wet Chardonnay barrels. The nose is a striking tapestry of white wine grape, soft oak tannins, and bright lemon peel, underpinned by the rustic, earthy funk of a mixed-culture fermentation. On the palate, a vibrant, vinous acidity harmonizes beautifully with delicate stone fruit, green apple, and subtle vanilla notes from the French oak. Effervescent and remarkably dry, it finishes with a lingering, dry minerality and a hint of white pepper spice.

Appearance. Hazy, pale gold to deep yellow (approx. 5-7 SRM) with a thick, billowy, mousse-like white head that exhibits excellent retention and leaves intricate, curtain-like Belgian lacing. Highly effervescent with visible carbonation streams rising through a slight, rustic haze.

Aroma. High intensity. Dominant aromas of ripe green apple, white peach, and gooseberry from the Chardonnay wood, intertwined with a complex bouquet of funky leather, horse blanket, and damp earth from the spontaneous fermentation. Low, rustic, cracker-like pilsner malt is present, overlaid by fruity-spicy yeast esters of white pepper, lemon peel, and a delicate, floral, earthy European hop note.

Taste. Vibrant initial impression of tart citrus and dry white wine. Low, grainy base malt flavor of soft wheat and Pilsner malt. Hop flavor is low and earthy, while hop bitterness is low-moderate, balanced and partially supplanted by a crisp, lactic acidity. Prominent wild yeast character delivers notes of lemon curd, stone fruit, and complex oak tannins. Extremely dry, highly attenuated finish with a lingering, refreshing, tart apple and mineral aftertaste.

Mouthfeel. Medium-light body with a lively, highly carbonated, and effervescent mouthfeel. A pleasant, dry tannic astringency from the Chardonnay oak adds structure without being harsh. Alcohol warmth is very gentle and well-integrated at 6.5% ABV, finishing clean and crisp.
