Burning Sky Brewery Apricot Rustique

This wild interpretation of a Belgian Pale Ale showcases a masterfully integrated fruit character. Having spent time on whole apricots at a high concentration, the sensory experience is defined by lush, ripe stone fruit and delicate, rustic oak tannins. A bright, initial sourness cuts through the malt’s bready, honeyed backbone, reflecting Burning Sky’s signature wild fermentation profile. The elevated strength of this version adds a gentle warmth, supporting the complex interplay between tart fruit and soft, spicy yeast esters. It finishes dry and structured, leaving a lingering impression of sun-ripened apricots and refined woody depth.
Appearance. Deep amber to burnished copper (10–14 SRM) with a dense, rocky white head that shows moderate retention. Slight haze is present from the significant fruit addition and wild yeast activity.
Aroma. High intensity of fresh, ripe apricots dominates, layered over a bready and honey-like malt foundation. Distinctive wild fermentation notes provide a rustic, slightly earthy funk and a sharp acidic edge. Subtle spicy yeast esters and a hint of vanillin from oak aging complement low floral hop notes.
Taste. Initial impression is a sharp, refreshing sourness that quickly transitions into lush, fleshy apricot flavors. The mid-palate reveals a toasted biscuit and nutty malt character. Hop bitterness is medium-low but reinforced by a tannic oak structure. Finishes very dry and clean with a lingering, tart stone fruit aftertaste and a hint of peppery phenol.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high and effervescent. A gentle, well-integrated alcohol warmth is present, alongside a mild tannic astringency from the oak and fruit skins.
