Burdock’s IPA Du Vin is an elegant Specialty IPA that showcases the aromatic synergy between New World hops and young Gewurztraminer grapes. It presents a captivating bouquet of lychee, rose petals, and white peach, underpinned by a bright, citrusy hop character. The influence of the wine grapes introduces a sophisticated vinous acidity and a hint of white pepper spice to the palate. Fermented to a crisp dryness, the beer maintains a lean malt profile that allows the floral and tropical notes to shine, concluding with a firm, clean bitterness and a refreshing, grape-inflected finish typical of a well-crafted wine-hybrid.
Appearance. Gold to deep amber (7–12 SRM). Clear with a brilliant luster. Displays a moderate-sized, white to off-white head with good persistence and fine lacing.
Aroma. High intensity aromatics. Dominant floral notes of rose and geranium alongside tropical lychee and passion fruit from the Gewurztraminer grapes. Supported by citrusy and resinous hop character. Low malt presence with a hint of honey or light toast. Clean fermentation profile.
Taste. Initial impression is hop-forward and vinous. Flavors of lychee, grapefruit, and white grape skins predominate. Low malt sweetness with a crackery or light bread-dough character. Medium-high bitterness that is firm but not harsh. Finish is very dry and crisp with lingering floral esters and a clean, resinous aftertaste.
Mouthfeel. Medium-light body with a crisp, slightly lean texture. High carbonation provides a lively, prickly sensation. Very low alcohol warmth. Minimal astringency despite the vinous character.
