Burdock Brewery’s Cherry B is a vibrant interpretation of a Saison, defined by the sharp, acidic punch of Ontario sour cherries. It marries the rustic, grainy character of a classic farmhouse ale with a sophisticated lactic tartness. The aroma is a bright bouquet of fresh cherry skins and peppery phenols, while the palate delivers a bone-dry, effervescent experience. Subtle earthy undertones from continental hops provide a delicate counterpoint to the fruit’s natural zing. Appearance. Hazy, pale pink to reddish-amber (approx. 8–12 SRM). Features a long-lasting, dense, rocky, light pink-tinted head with significant Belgian lace and high effervescence.

Aroma. High intensity; dominated by bright, tart Ontario sour cherry and spicy yeast esters reminiscent of black pepper. Low grainy malt sweetness and a faint, floral or earthy hop aroma are present, complemented by a clean, lactic sourness.

Taste. Initial sharp tartness from the cherries leads into a soft, grainy malt backbone. Hop flavor is low and floral, while bitterness is kept low to allow the acidity to lead the balance. The fermentation is highly attenuated and bone-dry, featuring a lingering, puckering cherry finish and spicy yeast notes.
