This opulent Sack Melomel presents a masterclass in fruit concentration, born from a waterless fermentation process that yields extraordinary density. The sensory profile is a sophisticated dialogue between the sharp, bright acidity of 2023 sour cherries and the jammy, concentrated essence of freeze-concentrated raspberries from 2022. High-strength honey provides a floral, velvety backbone that supports the massive 16% ABV warmth. On the palate, the experience is symphonic, weaving together deep forest berry layers with a structured tartness that prevents the intense sweetness from becoming cloying, culminating in a long, evocative finish of sweet honey and dark fruit skins.

Appearance. Deep oxblood to garnet in color with brilliant clarity despite its density. It exhibits exceptional viscosity, forming thick, slow-moving legs (tears) on the glass. No head or carbonation is present, characteristic of a still, high-gravity mead.

Aroma. High intensity and intoxicatingly fruity. Initial notes of jammy raspberry and floral honey are punctuated by the bright, sharp tang of sour cherries. As it warms, deeper notes of dark fruit leather, subtle almond-like cherry pit, and a clean, spicy alcohol warmth emerge, reminiscent of a fine fruit brandy.

Rich raspberry preserves dominate the fore-palate, quickly followed by a refreshing wave of tart cherry acidity. The fermentation character is clean but complex, showcasing the interaction between the fruit tannins and residual sugars. Mouthfeel. Full-bodied and syrupy with a thick, coating texture. Carbonation is absent (still). A significant, well-integrated alcohol warmth is present, providing a luxurious weight. Very low astringency from the fruit skins adds a pleasant structural element.
