Appearance.Deep pink to reddish-amber (SRM 10–15) with a light pinkish-white head that shows moderate to poor retention. The beer exhibits a slight haze, characteristic of fruit additions and wild yeast fermentation.
Aroma.Moderate to high intensity. Bright, tart cranberry notes lead, followed by a subtle, warm cinnamon spice that adds a woody complexity. A clean lactic acidity provides a sharp backbone, accompanied by very low earthy funk. Hop character and malt aromatics are absent.
Taste.The initial impression is sharply refreshing with a dominant cranberry tartness. Cinnamon follows on the mid-palate, providing a dry, spicy complexity rather than sweetness. Malt flavors are minimal, offering a thin cracker-like base. Bitterness is very low, hidden by the acidity.
