This Pale Doppelbock, styled as a Christmas White, presents a rich and celebratory sensory profile centered on a deep bready and toasty malt backbone. Utilizing a blend of Pilsner and Munich malts, it delivers a honeyed sweetness balanced by a delicate floral and herbal hop presence typical of traditional German varieties. The clean lager fermentation ensures the spotlight remains on the complex grain character, while the moderate carbonation provides a smooth, creamy texture. Despite its festive name, it remains a refined example of a paler strong lager, finishing with an elegant, attenuated dryness and just a whisper of festive warmth.

Appearance. Deep gold to light amber in color (SRM 6-9) with brilliant clarity. It supports a large, dense, and creamy white head with excellent persistence and fine lacing.

Aroma. High intensity of rich, bready malt with noticeable toasty and honey-like notes. Very low floral and spicy hop character. Clean fermentation profile with no esters or phenols; no harsh alcohol presence.

Taste. The initial impression is deeply malty and slightly sweet, featuring flavors of toasted bread crust and pale grains. Hop bitterness is moderate-low, providing just enough balance to the dominant malt. Faint spicy hop flavor persists through the mid-palate. The finish is surprisingly clean and relatively dry for such a strong lager, with a lingering bready aftertaste.

Mouthfeel. Medium-full body with a smooth, velvety texture. Moderate carbonation provides a gentle lift. Very light, well-integrated alcohol warmth is present without any harshness or astringency.
