Appearance. 2-3 SRM. Pale straw to light gold. Effervescent with a large, dense white head that exhibits poor retention. Clarity ranges from clear to a slight haze.

Aroma. High intensity lactic sourness dominates. Prominent notes of lemon peel, tart apricot, and green apple fruitiness. Subtle crackery and biscuity pale malt character. Clean fermentation profile with no hop aroma.

Taste. Initial impression is a bracing, clean lactic sourness. Complementary bready and crackery malt flavors provide a light foundation. Hop bitterness is undetectable. Pale fruit character is moderate, featuring citrusy-lemon and tart apple notes. No hop flavor. Finishes dry to off-dry with a lingering, crisp acidity.
