Corvus is a sophisticated Irish Stout that balances a profound roasted character with a highly approachable, long-drinking profile. The experience is centered on a sharp, torrefacto intensity, delivering clear sensory cues of freshly roasted coffee and unsweetened bitter chocolate. At 5.2% ABV, it carries slightly more weight than a standard session stout, yet maintains the classic dry finish essential to the style. The interplay between the dark malt bitterness and a smooth, creamy delivery creates a comforting yet vigorous sensation, making it as suitable for a focused tasting alongside Miles Davis as it is for pairing with fresh shellfish or sharp Cheddar.
Appearance. Jet black and opaque in the glass, showing deep ruby or garnet highlights when held to light (SRM 35-40). It supports a thick, persistent tan head with good lacing.
Aroma. Moderate to high intensity dominated by coffee-like notes and dark roasted grain. Subtle secondary aromas of cocoa and unsweetened chocolate are present, alongside a low earthy hop character and faint yeast esters.
