The sensory profile is defined by a seven-week maceration of one-fifth of the apple harvest, imparting a rustic structural depth and textural weight rarely seen in sparkling ciders. Expect a bouquet of sun-ripened orchard fruits and subtle earthy undertones. On the palate, the crisp acidity of the apples is softened by the floral sweetness of the pears, leading into a finish marked by gentle tannins and a persistent, lively effervescence that cleanses the palate.
Appearance. Pale straw to light gold (SRM 2-4); brilliant clarity with vigorous, fine carbonation; thin white collar that dissipates rapidly, leaving minimal lacing.
Aroma. High intensity of fresh pomaceous fruit; distinct notes of Bartlett pear and tart green apple are complemented by a faint, earthy skin-contact funk and light floral esters with no sulfur present.
