This Wild Specialty Beer from the Brussels Beer Project Dansaert program represents a sophisticated marriage of a Mixed-Fermentation Saison and traditional Lambic. Infused with rhubarb, the sensory profile is defined by a bright, zesty acidity and a rustic, barnyard funk. The rhubarb introduces a sharp, green-apple-like tartness and a distinctive vegetal freshness that weaves through the earthy, leathery notes of Brettanomyces. Subtle peppery phenols from the Saison base add a layer of spice, while the wheat-heavy grist provides a soft, cracker-like foundation. It concludes with an incredibly dry, mouth-watering finish, balancing aggressive fruit acidity with complex, aged fermentation character.

Appearance. Pours a hazy, pale straw with a delicate salmon-pink tint. It features a fine-beaded, white head with moderate retention that fades to a persistent collar, leaving light lacing on the glass.

Aroma. High aromatic intensity led by sharp, lactic sourness and piquant rhubarb. Underlying layers of 'horsey' or 'barnyard' funk are present, accompanied by hay, aged hops, and a subtle peppery spice. Light notes of sourdough and lemon zest round out the profile.

Taste. An initial burst of sharp malic and lactic acidity dominates, showcasing the tartness of fresh rhubarb. The mid-palate reveals a complex funk with notes of damp earth and leather. Hop bitterness is very low, as the balance is firmly tilted toward acidity. The finish is bone-dry and crisp, with a lingering tang of citrus peel and faint oak tannins.

Mouthfeel. Medium-light body with a crisp, effervescent carbonation that creates a prickly sensation on the tongue. There is a slight, pleasant astringency from the rhubarb and aged hops, with no perceived alcohol warmth.
