Brussels Beer Project’s Dark Sister emerges as a complex Belgian Black IPA, serving as the brooding relative to their flagship Delta. It pours a deep mahogany to jet-black hue under a persistent, creamy tan head. The sensory experience is led by a high intensity of resinous and tropical hop notes—reminiscent of the Citra hops found in its predecessor—which weave through spicy and stone-fruit esters from Belgian yeast. On the palate, restrained chocolate and toasted malt flavors provide a shadowy backdrop for firm, assertive bitterness. The finish is remarkably dry, balancing roasted depth with a vibrant, lingering hop-forward vitality.
Appearance. Deep mahogany to opaque black (35-40 SRM). Topped by a dense, persistent tan head with excellent lacing. Clarity is high, though the dark color makes it appear nearly opaque.
Aroma. High intensity aroma featuring prominent citrus, resin, and tropical fruit hops. Supporting this is a light chocolate and toasted bread malt character. Moderate spicy phenols and pear-like esters from the Belgian yeast strain provide a distinct complexity.
Taste. Initial impression is hop-forward with grapefruit and pine flavors. The malt profile is supportive rather than dominant, offering restrained notes of dark chocolate and coffee without burnt acridity. Firm bitterness leads into a dry, slightly roasted finish. Light peppery fermentation notes persist into the aftertaste.
Mouthfeel. Medium-light body with a smooth, almost creamy texture. Carbonation is moderately high, characteristic of the Belgian influence, providing a crisp bite. A very light, well-integrated alcohol warmth is present at 6.6% ABV.
