This innovative Gueuze from the Brussels Beer Project Dansaert program offers a fascinating twist on tradition by incorporating Koji Fermented Barley. The addition of koji introduces a unique savory umami depth that elegantly complements the classic wild Belgian character. Aromas of lemon zest, dried hay, and distinct horse blanket funk mingle with a subtle, earthy nuttiness. On the palate, a sharp, refreshing lactic acidity leads into an exceptionally dry finish where bready grains meet a lingering, tart fruitiness reminiscent of rhubarb and green apple. Its high carbonation and light-medium body ensure a crisp experience, while the Koji Fermented Barley provides a sophisticated, multi-layered complexity to the finish.

Appearance. Deep golden (6 SRM) with brilliant clarity. Features a thick, rocky, mousse-like white head with excellent retention and persistent effervescence.

Aroma. High intensity of complex funk, including horse blanket, leather, and earthy hay. Moderate sharp sourness is accented by citrus rind and green apple esters. The Koji Fermented Barley adds a subtle, savory, and slightly nutty undertone that enriches the bready, wheat-like malt base.

Taste. Initial impression is sharply tart and refreshing. Dominant flavors of lactic acidity and wild funk (barnyard, hay) are balanced by a low bready malt profile. The Koji Fermented Barley provides a unique savory complexity and a touch of earthiness. No hop flavor or bitterness is present; the balance is driven entirely by acidity. The finish is bone-dry, tart, and clean with a lingering funky aftertaste.

Mouthfeel. Medium-light body with a very high, effervescent carbonation. Features a notable tart, puckering quality on the tongue without harsh astringency. A very light, well-integrated alcohol warmth is present.
