Pouring a brilliant gold, it leads with an aromatic punch of fermented apples and a complex funk profile—think horse blanket, wet hay, and aged leather. The palate is defined by a bracing lactic acidity and the vinous structure of cider, providing notes of tart green apple and earthy tannins. Bone-dry and effervescent, the finish is exceptionally clean, leaving a lingering impression of orchard fruit and wild Brettanomyces character. It is a vibrant, acidic, and deeply refreshing exploration of the spontaneously fermented style.
