Cave'n'Castle is a robust Foreign Extra Stout that celebrates the synergy between deep malt complexity and classic hop influence. A complex grist of eight different malts creates a foundation of sticky toffee and bittersweet dark chocolate, countered by the sharper, acidic notes of fresh-roasted coffee. The addition of Hallertau Tradition hops provides a sophisticated herbal backbone that balances the inherent sweetness. It pours with a rich, creamy head and offers a velvety-smooth, unctuous experience on the palate. At 7.5% ABV, it carries a gentle, well-integrated warmth, culminating in a moderately dry finish that highlights its balanced, roasted character.
Appearance. Opaque, very deep brown to jet black (35–40 SRM). Topped by a large, dense, creamy tan head with excellent persistence and thick lacing on the glass.
Aroma. High intensity. Prominent dark chocolate, molasses, and acidic coffee roast. Secondary notes of sticky toffee and dark dried fruit such as raisin. Low herbal and floral hop aroma from Hallertau Tradition. Clean fermentation profile with very low, integrated alcohol warmth.
Taste. Initial impression is a rich wave of dark cocoa and toffee. Mid-palate reveals sharp roasted coffee and burnt grain without harshness. Moderate to high bitterness from roasted grains and Hallertau Tradition hops. Balances sweet malt sugars against a firm roasted bite. Finishes moderately dry with lingering notes of espresso and dark chocolate.
Mouthfeel. Full, unctuous body with a velvety-smooth, creamy texture. Moderate carbonation. Noticeable but well-integrated alcohol warmth. Very low astringency despite the heavy roast presence.
