Imperial IPA 7 º
Unstoppable is a vibrant Double IPA that showcases the expressive terroir of New Zealand. Brewed with a heavy hand of Rakau, Kohatu, and Motueka, plus Citra Cryo and Incognito, it offers an explosion of tropical intensity. Expect saturated notes of apricot and ripe fig grounded by a distinct pine needle resin. The presence of Motueka adds a bright lime zest flicker against a soft, wheat-leaning malt base. While it leans into the modern hazy interpretation, the finish remains structured and refreshing, balancing lush stone fruit with a clean, hop-forward bitterness typical of the style.
Appearance. Pale gold to light orange (4-7 SRM). Opaque, hazy appearance with a persistent, fluffy, off-white head that leaves significant lacing on the glass.
Aroma. Intense hop aroma dominated by tropical fruit (apricot, fig) and bright citrus (lime zest). Rakau provides stone fruit depth, while Kohatu and Motueka contribute floral and pine needle accents. Very low, clean, doughy malt presence with a neutral fermentation profile.
Taste. High hop flavor mirrors the aroma with layers of lime, mango, and pine resin. A supportive, crackery malt backbone provides balance without residual sweetness. Moderate-high bitterness that is firm but smooth, avoiding harshness. Finishes medium-dry and clean with a lingering tropical and resinous aftertaste.
Mouthfeel. Medium-full body with a creamy, soft texture. Moderate carbonation. Subtle alcohol warmth provides a slight glow without being hot or solventy. Very low astringency.
