Unholy is a vibrant Pastry Sour that showcases a lush, tropical fusion of lychee, white guava, and graviola. Brewed with 500kg of fruit for a 20hl batch, the sensory profile is dominated by exotic, sweet aromatics and a creamy, pastry-influenced texture. The lychee provides a delicate floral sweetness, while the white guava adds a musky, tropical depth, and graviola contributes a unique pineapple-citrus tang. Despite its wild specialty classification, the focus remains on the dense fruit character and a soft, lactic acidity. The high starting gravity ensures a medium-full body that carries the intense tropical fruit medley into a smooth, dessert-like finish.
Appearance. Straw to pale gold (SRM 3-5), appearing opaque and dense due to massive fruit additions. The head is off-white with moderate retention and pulpy lacing.
Aroma. High intensity aromatics of fresh lychee and tropical white guava. Distinctive graviola notes provide a creamy, citrus-like sharpness. Substantial pastry-like malt sweetness (bready, cake-like) is present, with very low hop character and a clean lactic sourness.
Taste. Initial impression is a burst of tropical fruit followed by a moderate, refreshing lactic acidity. Lychee and guava flavors are prominent and well-defined. The malt profile is bready and sweet, reminiscent of pie crust. Hop bitterness is very low, allowing the fruit and acid to dominate. The finish is lingering and fruity with a creamy, semi-sweet aftertaste.
Mouthfeel. Medium-full body with a creamy, viscous texture from the high fruit content. Carbonation is moderate. Alcohol warmth is subtle. No significant astringency; the acidity is smooth and well-integrated.
