This West Coast Black IPA offers a striking contrast between visual depth and aromatic brightness. Leveraging Chinook and Simcoe, it delivers intense layers of pink grapefruit, sharp pine needles, and a distinctive resinous spice. The addition of Simcoe Cryo amplifies these citrus and forest-like qualities. Beneath the hop dominance lies a clean, restrained malt base featuring whispers of dark chocolate and toasted sunflower seeds, providing color without the heavy acridity of a stout. It finishes crisp and decidedly bitter, honoring its West Coast roots with a lingering resinous snap and a refreshingly dry, lean body that remains highly drinkable.
Appearance. Deep ebony to opaque black (SRM 38). Topped by a persistent, creamy tan head with fine bubbles and excellent lacing. The liquid maintains a clear, brilliant clarity with a dark ruby highlight when held to the light.
Aroma. High intensity hop profile led by resinous pine, zesty grapefruit, and herbal spice. Background malt provides a subtle hint of dark cocoa and toasted bread, with a very clean fermentation profile and no significant esters.
Taste. Aggressive but clean bitterness leads the palate, supported by flavors of citrus zest and forest floor. The malt presence is low to medium, offering smooth chocolate and light roast without burnt or ashy harshness. Notes of resin and a unique hint of toasted sunflower seeds emerge mid-palate. Finishes bone-dry with a lingering, resinous hop aftertaste.
Mouthfeel. Medium body with a smooth, almost velvety texture. Carbonation is moderate, providing a crisp bite that enhances the hop bitterness. Noticeable but well-integrated alcohol warmth consistent with its 6.5% ABV.
