Cherry Me is a decadent Imperial Stout that showcases a unique double-mash technique, resulting in an exceptionally concentrated malt profile. By limiting boil time, the brewery preserves a clean, deep grain character that avoids heavy caramelization, allowing the base malts to shine alongside rich additions of lactose. Intense aromas of dark chocolate and espresso are lifted by the bright, tart fragrance of real cherries and a smooth, aromatic infusion of vanilla. On the palate, the beer is plush and dessert-like, balancing roasted bitterness with velvety sweetness. The result is a harmonious, complex masterpiece that drinks like a liquid black forest cake with a warming, luxurious finish.

Appearance. SRM 40+, jet black and opaque. It supports a thick, persistent deep tan head with excellent lacing. High viscosity is evident by the slow-moving legs that form on the glass after swirling.

Aroma. High intensity. Rich dark chocolate and roasted coffee provide a sturdy base, complemented by a prominent tart cherry presence. Sweet, creamy vanilla notes intertwine with dark fruit esters like plum and raisin. Very low hop aroma; clean fermentation with a hint of warming, well-integrated alcohol.

Taste. Initial impression is rich and dessert-forward. Deep malt flavors of cocoa and toasted grain are balanced by the sharp, authentic acidity of cherries. The lactose provides a creamy sweetness that bridges the gap between the roasted malt bitterness and the vanilla-laden finish. Bitterness is moderate but softened significantly by the massive residual sugars. The aftertaste is lingering, bittersweet, and complex.

Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present as a background character, providing a pleasant glow without any harshness or solvent notes.

Then we poured another batch of malt into the resulting wort, which resulted in a very high concentration of both sugars and flavor in the resulting wort. This is definitely a more difficult technique than the one we have used so far, but the results will surprise you! This time we limit the cooking time which affects less caramelization of the sugar and the discovery of the underlying maltiness. A Pastry Stout kifejezés leggyakrabban olyan stoutra utal, amelyet szándékosan édesre főznek és gyakran rengeteg cukros összetevő hozzáadásával készül. A Stout a porter szárazabb, sötétebb, testesebb erősebb leszármazottja. Színben nagyon hasonlóak, a stoutokban azonban sokkal több a karamellizált pörkölt maláta és a kávés ízvilág, valamint édeskésebbek is. A stout szó első ismert használata egy 1677-ben keltezett, az Egerton Manuscripts-ban talált dokumentumban, amely a sör erősségére utal. 1721-ben használták először a porter nevet egy pörkölt malátával készült sötétbarna sör leírására. A porterek hatalmas népszerűsége miatt a sörfőzők többféle erősségben készítették őket. Az erősebb, jellemzően 7 vagy 8 %-os alkoholtartalmú söröket "stout porter"-nek nevezték, így a stout és a porter története és fejlődése összefonódott.

V Browar Stu Mostów jsme použili novou technologii, která zahrnuje přípravu rmutu ve dvou fázích. Nejprve jsme udělali zápar, ze kterého jsme získali poměrně hustou mladinu. Poté jsme do vzniklé mladiny nalili další várku sladu, což vedlo k velmi vysoké koncentraci jak cukrů, tak chuti ve výsledné mladině. Je to rozhodně obtížnější technika než ta, kterou jsme používali doposud, ale výsledky vás překvapí! Tentokrát omezíme dobu vaření, což má vliv na menší karamelizaci cukru a odhalení základní sladovosti. Rozměrný přídavek laktózy zdůrazňuje dezertnost tohoto piva a přídavek třešní a vanilky korunuje celý dezert.
