That's Next! is a vibrant New England White Double IPA that marries the soft, bready character of wheat with a massive hop profile. Galaxy leads the charge with intense notes of passionfruit and peach, while Mosaic introduces layers of blueberry and resinous pine. Amarillo rounds out the bouquet with bright tangerine and zesty citrus. On the palate, a creamy, medium-full body supports flavors of tropical fruit and orange pith, finishing with a smooth, firm bitterness. This collaboration between Rockmill and Blech.Brut exhibits a hazy, luminous appearance and a well-integrated 7.8% ABV that provides a gentle, warming glow.

Appearance. Deep straw to light gold (4-6 SRM). Opaque with a characteristic New England haze. Features a thick, persistent, creamy white head with excellent lacing.

Aroma. High intensity hop aroma. Pronounced tropical notes of passionfruit and mango from Galaxy, backed by Mosaic's signature blueberry and earthy pine. Amarillo adds a floral citrus top note. Background malt is clean and bready with a noticeable wheaty twang.

Taste. Initial impression is a burst of tropical fruit juice and citrus peel. Malt flavor is supportive and doughy, reflecting the White DIPA influence. Bitterness is firm but lacks harshness, balanced by a soft mouthfeel. The finish is medium-dry with a lingering resinous and citrusy aftertaste.

Mouthfeel. Medium-full body with a creamy, soft, and pillowy texture. Carbonation is moderate. A smooth, restrained alcohol warmth is present but well-integrated, without any astringency.
