This West Coast IPA showcases a vibrant collaboration between Rockmill and Rec Brew, delivering a classic yet complex profile. The aroma leads with the resinous pine and sharp grapefruit of Simcoe, layered with the unique floral and dried sage notes characteristic of Talus. HBC 1019 adds a modern twist, contributing hints of tropical peach and melon. On the palate, a firm, clean bitterness defines the experience, supported by a lean, bready malt backbone. The finish is strikingly dry and crisp, leaving a lingering trail of citrus zest and herbal spice that invites another sip, perfectly capturing the bright, aggressive character of a classic American IPA.
Appearance. Deep gold color (SRM 7) with brilliant clarity. Pours with a dense, creamy white head that shows excellent persistence and leaves significant lacing on the glass.
Aroma. High intensity hop-forward aroma featuring prominent notes of dank pine and citrus oil from Simcoe, followed by an intriguing herbal-floral bouquet of rose and sage from the Talus. HBC 1019 introduces softer layers of nectarine and tropical stone fruit. A low, clean, cracker-like maltiness provides a neutral base with a very clean fermentation profile.
Taste. Initial impression is an assertive, sharp hop bitterness that commands the palate. Dominant flavors of grapefruit pith, resinous pine, and tropical fruit mirror the aroma. The malt character is low, presenting as toasted bread or light grain. The balance is heavily hop-forward, finishing very dry with a long, lingering bitterness and a clean, resinous aftertaste.
Mouthfeel. Medium body with a smooth, slightly crisp texture. Carbonation is medium-high, which enhances the dry finish. Very light, well-integrated alcohol warmth is present. No hop-derived astringency.
