This Imperial Stout presents an imposing sensory profile, deeply transformed by twenty months in Highland Park whisky barrels. The aroma is a complex tapestry of peat smoke, heather honey, and rich dark chocolate. On the palate, the decadent sweetness of maple syrup melds with roasted malts to create a velvety base for the subtle, earthy heat of chipotle peppers. Lingering notes of charred oak and vanilla from the long maturation provide structure, while the high alcohol content offers a refined warmth. It is a harmonious marriage of intense roast, spicy smoke, and spirituous depth, finishing with a persistent, bittersweet complexity.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, dense, dark tan head that exhibits moderate retention and leaves significant oily lacing and visible legs on the glass.
Aroma. High intensity with a dominant blend of bittersweet chocolate, espresso, and heavy roast. The Highland Park barrels contribute distinct notes of peat smoke, honey, and seasoned oak. Complementary chipotle smokiness and maple syrup sweetness are present, alongside dark fruit esters of prune and raisin and a noticeable but smooth spirituous warmth.
Taste. A complex, multi-layered profile starting with rich maple syrup and caramel sweetness. This is quickly balanced by aggressive roasted grain bitterness and dark chocolate flavors. The chipotle provides a low-level spicy tingle and earthy smoke. Mid-palate introduces Highland Park whisky characteristics including heather, peat, and vanilla. The finish is long and bittersweet, with a lingering roast and warming alcohol presence.
Mouthfeel. Very full-bodied and viscous with a chewy, velvety texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present without being harsh. There is a very slight, pleasant capsicum heat from the peppers.
