This vibrant Gose reimagines a historical style with a modern, juicy twist. Brewed with Pilsner and Wheat malts alongside Oat flakes, the beer presents a characteristic haze. The addition of lactose and a generous dose of 100% passion fruit pulp transforms the profile into a tropical experience. Intense aromas of tart maracuja and pineapple-like esters from the WLP644 Saccharomyces brux-like Trois fermentation lead into a palate where sharp lactic acidity from L. Helveticus and L. Delbruecki is softened by a creamy mouthfeel. The classic salinity of a Gose provides a mouthwatering edge, perfectly balancing the fruit’s natural tartness for a refreshing, complex finish.

Appearance. SRM 3-4. Golden-yellow with a heavy, opaque haze from the fruit pulp and oat flakes. Moderate white head with fair retention and tight lacing.

Aroma. High intensity. Bold, fresh passion fruit dominates the nose, supported by tropical pineapple and stone fruit esters from the yeast. Subtle bready wheat and a clean, lemony lactic tartness are present, with no detectable hop aroma.

Taste. Immediate impression of sharp passion fruit and clean lactic sourness. A doughy, bready malt backbone is present, though significantly rounded by lactose sweetness. Light salt character appears mid-palate, enhancing the fruit vibrancy and providing a mouthwatering quality. Bitterness is very low to nonexistent. The finish is refreshing, balancing tart fruit acidity with a lingering creamy sweetness.

Mouthfeel. Medium-full body, notably heavier and silkier than traditional examples due to lactose and oats. Carbonation is moderate to high and effervescent. No alcohol warmth; the salt provides a slight tingly sensation on the tongue.
