Sencha Pancho is a vibrant take on a Berliner Weisse, delivering a sensory profile defined by its bracing acidity and botanical complexity. The aroma is led by the aromatic, floral zest of Yuzu and the tart, orange-lime character of Calamansi, which meld seamlessly with the grassy, vegetal notes of Sencha Tea. On the palate, a clean lactic sourness provides a sharp backbone for the bright, acidic punch of Lime. A delicate, doughy wheat malt presence offers a brief structural support before the beer concludes with a bone-dry, effervescent, and herbal finish. It is an exceptionally crisp and refreshing session-strength ale.

Appearance. Very pale straw (SRM 2-3) with a slight, hazy cloudiness from the fruit and tea additions. Pours with a large, white, fizzy head that dissipates rapidly due to high acidity, leaving minimal lacing.

Aroma. High intensity of sharply sour lactic notes and fresh citrus. Dominant scents of aromatic yuzu and tart calamansi are layered over a distinct grassy, herbal sencha tea character. A faint, clean sourdough wheat malt note is perceptible in the background. No hop aroma.

Taste. The initial impression is one of sharp, clean lactic sourness and bright citrus acidity. Flavors of lime and exotic citrus fruits dominate the mid-palate, complemented by a light, grainy wheat malt flavor. The sencha tea provides a subtle herbal depth and a very slight vegetal complexity. Bitterness is undetectable, as the sourness provides the primary balance. Finishes very dry and crisp with lingering citrus zest.

Mouthfeel. Light-bodied but not watery. Very high carbonation creates a lively, effervescent prickly sensation on the tongue. No alcohol warmth is present. Sharp, crisp acidity throughout.
