Ripper reinterprets the traditional German Pils through a vibrant West Coast lens. Built upon a clean, grainy foundation of Pilsner malt, this lager serves as a brilliant canvas for a modern hop trio. Simcoe provides a sharp resinous pine backbone, while Citra and Mosaic unleash a wave of bright grapefruit, mango, and subtle blueberry notes. It presents a brilliant straw hue topped with a persistent, creamy white head. The sensory experience is defined by high-intensity aromatics and a crisp, bone-dry finish. This beer expertly balances the refreshing drinkability of a classic lager with the bold tropical complexity and assertive bitterness typically found in American IPAs.

Appearance. Brilliant straw to pale gold (3 SRM) with exceptional clarity. Pours with a dense, creamy white head that shows excellent retention and leaves fine lacing on the glass.

Aroma. High aromatic intensity driven by hops. Prominent notes of grapefruit, tropical melon, and passion fruit from Citra and Mosaic, supported by a distinct piney and resinous Simcoe character. The malt is low but present, offering a clean, grainy-sweet, and cracker-like quality. Fermentation is very clean with no detectable esters or sulfur.

Taste. Initial impression is a brief flash of grainy malt sweetness that is quickly overtaken by assertive hop flavors of citrus zest, tropical fruit, and forest pine. Bitterness is firm and high for the style, providing a sharp, refreshing edge. The finish is crisp and very dry, with a lingering, clean bitterness and a touch of hop resin in the aftertaste.

Mouthfeel. Medium-light body with high carbonation, creating a lively and snappy mouthfeel. It is crisp and refreshing without any harsh astringency. Alcohol warmth is very light and well-integrated.
