Geist is a vibrant, refreshing interpretation of the traditional Gose, crafted in collaboration with historical revivalists Freigeist Bierkultur. It opens with a bright, lactic tartness that immediately refreshes the palate, supported by a soft, doughy foundation from the wheat malt. The sensory profile is defined by a delicate interplay between a restrained sea salt minerality and the citrusy, lemon-like zest of fresh coriander. These elements create a crisp, effervescent experience with a remarkably dry finish. The salt provides a mouthwatering quality that enhances the subtle pome fruit esters, making for a balanced and highly sessionable tart ale that emphasizes brightness and clarity of flavor.

Appearance. Pale yellow (3–4 SRM) with a moderate, persistent haze. Features a tall, white, effervescent head with tight bubbles and moderate retention.

Aroma. Moderate intensity with a clean lactic sourness. Pronounced citrusy coriander notes resembling lemon zest or dried orange peel. Low bready and doughy malt character, with a faint, fresh mineral saltiness and light pome fruit esters. Hop aroma is absent.

Taste. Initial impression is a sharp, refreshing lactic acidity. Moderate bready wheat malt flavor provides a soft mid-palate, followed by a noticeable but restrained salt character that enhances the citrusy lemon notes of the coriander. Very low bitterness; the finish is crisp, fully-attenuated, and bone-dry, with acidity providing the primary balance. Clean aftertaste with lingering lemon and mineral notes.

Mouthfeel. Medium-light body with a slightly rounder, mouthwatering quality attributed to the salt and wheat. High to very high carbonation creates a lively, effervescent, and tingly sensation. No perceived alcohol warmth.
