Half A Dozen is a decadent Wild Specialty Beer that pours with the intensity of liquid berry jam. The aroma is a concentrated blast of blackcurrant and ripe blackberry, softened by creamy vanilla and a hint of earthy cocoa nibs. On the palate, a complex medley of plums and blueberries provides a deep sweetness that balances a sharp, clean lactic acidity. The addition of salt heightens the fruit flavors, creating a savory-sweet dessert profile. While the wild fermentation adds a subtle layer of complexity, the focus remains on the luscious, velvety fruit and the lingering, pastry-like finish of cocoa and vanilla.
Appearance. Deep, opaque violet to dark purple (SRM 35+); thick, persistent pinkish-purple head with heavy lacing and fruit-pulp opacity.
Aroma. High intensity; dominant notes of tart blackcurrant and jammy blackberry are immediate. Secondary layers of sweet vanilla bean and a dusty cocoa character provide a dessert-like richness. Clean lactic tartness is present with very low funky esters.
Taste. Initial burst of sharp blackcurrant tang and fleshy plum sweetness. A forest-fruit medley of blueberry and blackberry is supported by a smoothing vanilla and cocoa nib presence. A distinct salt addition enhances the fruit perception and provides a savory-sweet balance. High acidity, though tempered by the dessert-like adjuncts, leading to a lingering, jammy finish.
Mouthfeel. Full-bodied and viscous; creamy and coating texture with moderate carbonation. Low alcohol warmth and a slight mouth-watering effect from the salt.
