Browar Birbant Old Ale

Old Ale 7.4 º 33 IBU
This Old Ale opens with a deeply comforting, rustic sensory profile shaped by the rich, molasses-like depth of muscovado sugar and a complex fermentation bouquet from WLP022 Essex Ale Yeast. The aroma presents layers of dark toffee, roasted hazelnuts, and dark plum, accented by a subtle, earthy, and herbal spice from East Kent Golding hops. Aging on oak flakes introduces elegant, structured woody tannins and a hint of vanilla, which meld seamlessly with the warming, vinous alcohol. On the palate, it is chewy and decadent, balancing deep malt sweetness with a dry, softly oak-kissed finish that honors classic British traditions.
Appearance. Deep reddish-copper to dark brown with brilliant clarity when held to the light. Crowned by a moderate, creamy, light tan head that recedes to a persistent collar with light lacing.
Aroma. High aroma intensity dominated by rich caramel, dark toffee, and the deep, molasses-like sweetness of muscovado sugar. Prominent fruity esters of dark raisin, fig, and plum are driven by the English yeast strain. The oak conditioning introduces a distinct but integrated woodiness, with hints of vanilla and toasted coconut. Hop aroma is very low, presenting as a faint, earthy, and herbal note from the East Kent Golding hops. No diacetyl is present.
Taste. Rich and complex initial impression of sweet dark malts, toffee, and caramelized sugars. Distinctive muscovado-derived molasses and dried dark fruit flavors unfold on the mid-palate, complemented by a light, woody tannin astringency from the oak. Hop flavor is low, showing classic English earthy and herbal notes. Bitterness is moderate but clean, balancing the high malt sweetness without being harsh. The finish is medium-dry with a lingering, warming, sherry-like vinous character and soft oak dryness.
Mouthfeel. Medium-full, chewy, and luscious body. Carbonation is low to moderate, lending a smooth, velvety texture. A pleasant, gentle alcohol warmth is noticeable but well-integrated at 7.4% ABV. A very light, pleasant wood-derived tannin astringency adds structure to the mouthfeel.
