Hiruko is a captivating Double IPA that centers on the singular, bold profile of Sorachi Ace hops. It pours with a lush, hazy appearance typical of modern juicy iterations. The aroma is an intense bouquet of lemon zest, fresh dill, and creamy coconut, underscored by a subtle tropical fruitiness. On the palate, the Sorachi Ace continues to dominate, delivering a unique herbal and citrus snap against a soft, supportive grainy malt base. Despite its 7.6% ABV, the finish is remarkably clean and dry, balancing a firm bitterness with a smooth, velvety texture that highlights the brewer's intent for a juicy yet powerful experience.

Appearance. Pale gold to light orange (approx. 7 SRM). Opaque haze consistent with the juicy sub-style. Large, frothy white head with excellent persistence and intricate lacing.

Aroma. Intense and distinctive hop aroma featuring prominent notes of lemon peel, fresh dill, and subtle coconut, characteristic of Sorachi Ace. Supported by secondary notes of peach and pineapple. Very low, clean, bready malt background; neutral fermentation profile with a hint of alcohol warmth.

Taste. High hop flavor mirroring the aroma with assertive lemon, herbal dill, and a touch of tropical stone fruit. Bitterness is firm and clean, balanced by a light, soft malt sweetness that quickly fades. The finish is medium-dry and crisp, leaving a lingering herbal and citrus hop aftertaste without harshness.

Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate-high, providing a lively prickle. A well-integrated, gentle alcohol warmth is present, commensurate with its 7.6% strength. No astringency.
