Daemon is a vibrant Double IPA that showcases a modern, punchy hop profile driven by the combination of Enigma and El Dorado varieties. The nose is a complex tapestry of red currant and raspberry from the Enigma, interwoven with the distinct watermelon and stone fruit notes typical of El Dorado. On the palate, the hop intensity is high but remains smooth, delivering flavors of tropical pear and a subtle, vinous hint. A clean, neutral malt backbone supports the massive hop load without adding unnecessary heaviness, leading to a dry, crisp finish with a firm, lingering bitterness that emphasizes the beer's strength and drinkability.

Appearance. Gold to light copper (8 SRM) with excellent clarity and a moderate-sized, persistent, off-white head that leaves decorative lacing on the glass.

Aroma. High intensity hop aroma featuring prominent notes of tropical fruit, red berries, and sweet pear. A light, neutral, grainy maltiness sits in the background, complemented by a very low, clean fermentation profile and a hint of smooth alcohol.

Taste. Initial impression is a burst of tropical and stone fruit flavors, specifically pineapple and watermelon. Malt flavor is low and soft, providing a clean canvas for the hops. Bitterness is high but well-integrated and smooth. The finish is medium-dry with a long, resinous, and fruity hop aftertaste.

Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate to high, providing a crispness that cuts through the hop oils. A light, well-integrated alcohol warmth is present without any harshness or astringency.
