This Wild Specialty Beer offers a vibrant tropical escape, masterfully blending a tart wild fermentation with a lush trio of fruit. Pineapple provides a bright, acidic core, while succulent nectarine adds a stone fruit roundness to the mid-palate. The pink guava introduces an exotic, floral musk that permeates both the bouquet and the finish. This ensemble is supported by a subtle, clean lactic acidity that sharpens the fruit definition without overwhelming the senses. Effervescent and light-bodied, the beer finishes crisp and dry, leaving a lingering trail of tropical essence and a faint, rustic funk characteristic of its wild origins.
Appearance. Pours a hazy, pale golden-orange with a distinct pinkish tint from the pink guava. Features a small, fine-beaded white head with low retention and minimal lacing, typical of acidic styles.
Aroma. High intensity aromatics of fresh-cut pineapple and musky, tropical pink guava. Subtle notes of ripe nectarine add a sweet stone-fruit layer. Fermentation character is clean and acidic with very low rustic funk and no discernible hop aroma.
Taste. Initial impression is a bright, refreshing lactic tartness. Dominant flavors of acidic pineapple and tropical guava are prominent, followed by a softer, fleshy nectarine sweetness. Hop bitterness is nearly absent. The finish is very dry and crisp, with the acidity enhancing the fruit's natural zest without becoming harsh.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a lively, effervescent sting. No alcohol warmth at 4.5% ABV. A very slight fruit-skin astringency adds structure to the dry finish.
