This Straight Sour Beer presents an evolved sensory profile shaped by over two years of maturation in red wine casks. The base provides a crisp, crackery malt foundation that supports an assertive lactic sourness, while the addition of Brettanomyces introduces complex layers of rustic funk, hay, and aged leather. The red wine barrel influence is profound, contributing vinous notes of dark fruit and a subtle oak-derived tannic structure. Its high attenuation leads to a bone-dry finish where sharp citrus acidity meets a sophisticated, lingering wild character, creating a refreshing yet intellectually demanding drinking experience.

Appearance. Pale straw to light gold (3 SRM) with a slight haze from extended aging and yeast activity. Features a thin, white head with poor retention, typical of highly acidic beers, and lively effervescence.

Aroma. High intensity of sharp lactic acidity reminiscent of fresh lemon juice and tart apples. A pronounced Brettanomyces character provides earthy funk, hay, and a hint of stone fruit. The red wine cask aging adds a distinct vinous quality with whispers of oak and dried berries over a faint, crackery malt background.

Taste. Initial impression is a clean, sharp lactic sourness that dominates the palate. Mid-palate reveals complex esters of peach and apricot alongside rustic funk. The red wine barrel maturation imparts a subtle vinous fruitiness and oak tannins. Hop bitterness is undetectable, allowing the bready malt and high acidity to define the balance. The finish is bone-dry, crisp, and exceptionally clean.

Mouthfeel. Medium-light body with a refreshing, crisp acidity. High carbonation provides a prickly sensation on the tongue. There is a noticeable but well-integrated alcohol warmth given the strength, and a light tannic astringency from the two-year barrel residence.
